Other details: Executive Chef Ryan Ratino presented select media with a tasting of his new menu offerings including Tuna Sashimi with poached kombu, lemon and coconut; Scallop Crudo with celery, green olive and ginger vinaigrette; Spanish Octopus with sauce romesco, curried orange, radish brown butter and grapefruit; Lamb Carpaccio with garlic confit, oaxaca cheese and banana pepper; Korean Fried Chicken with yucca fries, mojo and kimchee aioli japanese pickles; and Black Garlic Marinated Striploin with bone marrow, rye, pickled vegetables and grapes.
*Special tip: The Short Rib Ravioli with foie gras, winter truffle, mushrooms & watercress is not on the menu but available for those "in the know" who ask for it. You heard it here first!
