Butternut Squash Soup

Ingredients:

2 Tablespoons olive oil
¾ cup white wine (optional)
1 large onion, chopped
3 cloves garlic, minced
2 large carrots, peeled and chopped
1 butternut squash, peeled, seeded, cut into 1-inch cubes
6 cups gluten-free low-sodium chicken stock (or vegetable stock)
2 large or 3 small/medium apples*, cored and chopped
1 Tablespoon curry powder
½ teaspoon coriander
½ teaspoon cinnamon
1 large sprig of fresh rosemary
1 teaspoon salt (plus more to taste)
1 teaspoon cracked pepper
½ cup half and half, plus a little extra for garnish
2 Tablespoons honey
