Queen's Park Swizzle

This little swizzle is named after the Queen’s Park Hotel in Trinidad where it was created in the 1920s. Simple and delicious.

WHAT YOU'LL NEED
3 teaspoons freshly squeezed lime juice
2 sprigs mint, plus extra to garnish 60 ml (2 fl oz/1⁄4 cup) dark rum
2 dashes Orange bitters
3 teaspoons Sugar syrup
60 ml (2 fl oz/1⁄4 cup) soda water (seltzer)

Place the lime juice and mint in a metal cup. Fill with crushed ice.

Add the rum, bitters and sugar syrup. Stir to combine and top with soda. Garnish with mint.
