Jose-Ramirez Ruiz, a former Per Se chef, focuses on vegetables for the dishes (Semilla is Spanish for seed), but there's no set menu. Adventurous eaters will be happy to dish out $75 for a prix fixe menu at the communal table, bound to provide a memorable dining experience.
