Healthy Mac and Cheese What You'll Need: 1 cup finely chopped cauliflower 1/2 cup skim milk 3 oz. shredded cheddar 3 oz. shredded parmesan 1/4 cup reduced fat sour cream 1 tbs. Dijon mustard 2 egg whites 1 16 oz. bag frozen peas 4 cups cooked multigrain elbow macaroni 1/4  cup whole wheat breadcrumbs Preheat the oven to 350 degrees. Combine the cauliflower, milk, cheeses, sour cream, mustard, salt, pepper, egg whites and peas in a large bowl and mix well. Stir the mixture with the cooked macaroni and put in casserole dish. Sprinkle breadcrumbs on top and bake for 35-40 minutes. [Photo via]
