Any foodie worth their salt knows that the original Nomarevolutionized culinary culture and created a genre of New Nordic cuisine. Chef René Redzepi closed the first incarnation back in 2017, reopening a year later in a new space. Clearly, it's still just as good. The new dining structure is notable: three 20-course menus per year based on the top ingredients available during a given season. Autumn is Game and Forest, late winter through spring is Seafood season, and summer is all about vegetables.
