When you first opened, did you expect it to become such a mainstay, especially in the nightlife scene?
When we first opened, the primary focus of SOE was a food driven concept. As the months went on, and guests wanted to stay past dinner service due to the high energy ambiance of the space, we saw that there was an opportunity to use our nightlife backgrounds to create a strong nightlife program.
