How did Glasserie begin?
I always had this vision of doing something that was a bit removed from the main zones. As a diner, I like the idea of going on a bit of a journey to find something. To this day, we have regulars that come here frequently but there’s still this sense that you've found Glasserie, because we’re a little off the beaten track. That was always part of the vision. I saw how good Middle Eastern food is so hard to find in New York. Even in London it’s easy to find an amazing Arabic or Middle Eastern restaurant. But not here. I honestly don’t know why. So I was very interested in exposing the cuisine.
