Breakfast Baked Potato Skins

If you have a little extra time in the morning, definitely give these a try. Packed with protein, they'll give you energy all day.

Ingredients:

-5 Russet Potatoes, washed and dried
-8-10 pieces of bacon
-5 Eggs
-3 cups uncooked spinach
-1 clove of garlic
-2 tbsp ghee, melted (or you could use olive oil)
-Arugula Pesto (optional)
-Parsley
-Kosher salt
-Olive oil
-Salt and pepper
