Jambalaya

You don't have to go to New Orleans for some delicious Jambalaya! With this recipe, you can make it in the comfort of your own home. 

Ingredients:

-1 pound of sausage. cut into 1 inch pieces
-1 pound of chicken, cut in 2 inch cubes
-1 pound of shrimp, peeled and deveined
-1 yellow onion, diced
-3 stalks of celery, diced
-1 green bell pepper, diced
-3 cloves of garlic, minced
-1 can of fire roasted tomatoes (14 oz.)
-2 1/2 cups of compliant chicken stock (low sodium) + 1/2 cup, if too thick
-1 tbsp avocado oil
-2 1/2 tsp compliant Creole Seasoning
-1/2 tsp thyme
-1/2 tsp oregano
-1/2 tsp garlic powder
-1/2 tsp salt
-1/4 tsp pepper
-3 dashes of hot sauce (optional)
-1 date, pitted and chopped (optional)
-Fresh parsley to garnish
