Mango Shrimp in Endive Leaves
For this dish, you'll need some shrimp, mangoes, and a meticulous hand. Once your shrimp is prepared and seasoned, you'll have to carefully place them into separate endive leaves. This dish is all about presentation, so make sure you place your tropical mix into the endive leaves with style.
Ingredients:
1/2 pound cooked peeled and deveined shrimp, chopped
1/2 mango, finely diced (about 1 cup)
2 tablespoons chopped fresh cilantro
2 tablespoons olive oil
1 tablespoon fresh lime juice
2 teaspoons grated fresh ginger
kosher salt and black pepper
24 endive leaves (from about 3 heads)
