Sotto's neapolitan craftsmen, Steve Samson and Zach Pollack, work to create a sophisticated honesty with their market-driven menu and fresh ingredients. Utilizing a traditional wood-burning oven, the pies cook at 900 degrees in less than 60 seconds to achieve a paradoxical quality the chefs say is "humble yet exalted."
