How has the industry evolved during your time involved?
Sadly it has become boring! When I started it was so fun and exciting. Now it feels like everyone and their mother is opening a "boutique” hotel (I don’t even know what boutique hotel means). All these large corporations are hiring designers and throwing money at chefs and it's become so formulaic and boring!
