[Photo by RobinMiller] Eat This. Since we are working on location today at Mecox Bay, we saw it fitting to suggest a recipe that is perfect to eat while lounging dockside. Although originally created in the United Kingdom, Fish N' Chips is an extremely popular recipe in the northeast. Therefore today's recipe is Beer Battered Fish N' Chips with homemade tartar sauce. To make it an even more authentic dockside meal, you can wrap your Fish N' Chips meal in a paper cone. Recipes are courtesy of Closet Cooking. Ingredients and directions below:
INGREDIENTS:
FISH
1 bottle beer
2 c. flour
1 tsp. baking powder
1 large egg (lightly beaten)
1 lb. cod fillets (or halibut, or haddock, etc., cut into serving sized pieces)
salt and pepper to taste
1/2 c. flour
oil for frying
CHIPS
4 potatoes (such as russet)
oil for frying
salt
TARTAR SAUCE
1/2 c. mayonnaise
1 tbs. capers (chopped)
1 tbs. dill pickle or cornichons (chopped)
2 tbs. dill (chopped)
1/2 lemon (juice)
DIRECTIONS:
FISH
Mix the beer, flour, baking powder, salt and egg into a batter in a bowl
Season the fish with salt and pepper
Dredge the fish in the flour and shake off any excess
Dip the fish into the batter
Fry the fish in preheated 375F oil until cooked, about 4-5 minutes
CHIPS
Cut the potatoes into the desired shape.
Heat the oil to 325F
Add the fries and fry until pale and floppy, about 2-3 minutes, and remove
Heat the oil to 375F
Add the fries and fry until golden brown, about 2-3 minutes and remove
Season with salt to taste
TARTAR SAUCE
Mix everything together
